The Basics: What is an Instant Pot?

First and foremost, an Instant Pot is a pressure cooker that is a little over-engineered and a whole lot of awesome! Many people mistakenly assume that an Instant Pot is just another fancy name for a pressure cooker, but that is not the case. While a pressure cooker can cook food in just a few minutes, it is not very energy efficient and can be quite dangerous if not used correctly. On the other hand, the Instant Pot is a modern electric pressure cooker that is safe, energy-efficient, and actually lets you walk away from the kitchen while dinner is being made.

This isn’t a food article without a recipe so here it is.

This makes dinner for 4 people.

Ingredients:
4 Chicken thighs (they come out more tender than breasts but you can try it however you see fit)

2 Tablespoons of butter (can be replaced with oil)
Salt and pepper (I add about a 1/2 tablespoon worth of each of my salt and pepper but you can play with home much you use as you make this recipe in the future)

Add your chicken to the bottom of the pot, and pour in your rice, water, butter, sauce, and seasoning. Cook for 20 minutes under high pressure. While the meal is cooking defrost your veggies in a bowl in the microwave until they are still cold but not frozen. when the Instant Pot is finished and you have released the steam you can add your veggies to the mix and stir for a minute until everything is mixed well and there is rice, veggies, and chicken in every bite.
